Megan Sheley's Taco Skillet
- 1 lb ground turkey or beef
1 can fire roasted diced tomatoes
1 packet of spicy taco seasoning
1/2c black beans
1.5c shredded cheddar cheese
1 cup cherry tomatoes
1/4 cup chopped red onion
1/4 cup chopped cilantro
1/4 lime, squeezed
pinch of salt
1 cup shredded lettuce
1/2 jalapeno (sliced thinly)
1/4 cup sour cream
2-3 tbsp water
2 tbsp hot sauce
In one large skillet, brown your ground turkey or beef (drain the fat if needed).
Once fully cooked, about 7 minutes, add in 1 can of fire roasted diced tomatoes, and 1 packet of taco seasoning - mix well
Add in your black beans and corn and mix again.
Top with shredded cheese and cover your pan and set heat to low until cheese is melted and food is plenty warm.
While the skillet is heating, prep your pico de gallo.
Chop your cherry tomaotes, red onion, and cilantro - add to a small bowl and mix, add a squeeze of fresh lime juice and a pinch of salt. Set aside
In a small dish, mix sour cream, hot sauce, and water to make a liquidy sour cream that is easy to drizzle.
Remove your skillet from heat - top with crushed tortilla chips, shredded lettuce, your fresh pico de gallo, sliced jalapenos, and drizzle your spicy sour cream. Top with avocado if you'd like! Enjoy!
